Inspired by Jokichi Takamine’s original koji fermentation method, this Japanese whisky is crafted using malted barley inoculated with koji mold, then distilled and aged for eight years in oak casks. The profile is distinctive—layering sweet grain, honey, and baked apple with notes of vanilla, light spice, and subtle umami from the koji process. Medium-bodied with a soft, rounded texture, it finishes clean, warm, and quietly complex, bridging traditional whisky with Japanese fermentation techniques.
